Title: Old Fashioned Meatloaf

2cOnion; finely chopped
1tbGarlic; minced
1 Celery rib; finely chopped
1 Carrot; finely chopped
1/2cScallions; finely chopped
2tbUnsalted butter
2tsSalt
1 1/2tsBlack pepper; freshly ground
2tsWorcestershire sauce
2/3cCatsup
1 1/2lbGround chuck
3/4lbGround pork
1cBread crumbs
2lgEggs; lightly beaten
1/3cParsley; minced

Preheat oven to 350 degrees F. In a large heavy skillet cook onion, garlic, celery, carrot and scallion in butter over moderate heat, stirring, for 5 minutes. Cook vegetable, covered stirring occasionally until carrot is tender, about 5 minutes more. Stir in salt and pepper, Worcestershire sauce and 1/3 cup of catsup and cook, stirring, for 1 minute. In a large bowl combine vegetables, meats, bread crumbs, eggs and parsley. In a shallow baking pan form mixture into a 5"X10" oval loaf and spread remaining 1/3 cup of catsup over the loaf. Bake for 1 hour or until a meat thermometer inserted into center registers 155 degrees F.
